spirits! It always seems that this is the time of year
when everyone gets back in focus and evaluates their
lifestyles. Corporate lifestyle or Innkeeping lifestyle,
both are very
different and we hope we can assist you along the

Is it a Front Desk or Sales Position?
When a call reaches the front desk of an Inn,
many times it is just thought of as a telephone call
and a potential guest for the Inn. In reality, the front
desk is a full powered sales position. This is nothing
to shy away from. The sooner that this is
acknowledged and embraced, the results will show in
the bottom line. This is important to remember when
you purchase your own Inn.
Prior to owning and operating our own Inn on the
coast of Maine, my background was mainly sales and
marketing. There is a basic formula for sales, and
here is the secret recipe:

Feedback From a Seminar Graduate Doing a Start-Up Inn
The last edition of InnVision featured an article
about the challenges of a start-up Inn. It is an arduous
process, yet many Innkeepers have accomplished
this feat successfully. We received feedback from
Seminar Graduates, Frank and Gaye Luaces
regarding their recent endeavors of starting their own
Inn. We wanted to share their feedback with you:
"I just read your e-mail about starting an inn. We
are
just finishing our "start up inn" and plan to open next
spring. We are former students of Oates & Bredfeldt
and would not have done innkeeping any other way.
We purchased an old farmhouse in Valle Crucis,
North Carolina, in a magnificent setting, and have
restored, remodeled , and added on several additions
to create the luxury-lifestyle inn of our dreams. There
have been lots of difficulties, sheer exhaustion (we
are building a lot of this project ourselves), great
stress on family and finances, neighbors who were
happy we were there and others who were not, acting
as our own contractors from afar (we live in Miami)
and each of us running our own businesses as well.
But we still would not have it any other way! We are
so thrilled and proud of what we have accomplished
together and hope to up and running soon. We know
there are many challenges ahead and hope to use
our many years of business experience to help us in
our future endeavor. We are working on our web-site,

Try this Fall-Inspired Recipe!
Pumpkin-Cranberry Bread Pudding
with
Vanilla Custard Sauce
Recipe courtesy of De & Mike Kennedy at The Five Gables
Inn in East Boothbay, Maine
Ingredients:
Pudding:
4 c. milk
4 eggs
2 egg yolks
16 oz. canned pumpkin puree
1 c. sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg, ground gloves, ground ginger
3/4 pound of whole wheat bread cut in 1/2 inch
cubes
2 c. cranberries, fresh or frozen
1/2 c. bourbon
Sauce:
2 c. half and half
6 egg yolks
3/4 c. sugar
1 tsp. vanilla extract
Directions:
For Pudding:
1. Combine all pudding ingredients. Spoon into
greased 9x13 baking pan. Bake 350 degrees for 1
hour
For Sauce:
2. Bring half and half just to simmer in a saucepan.
Combine yolks and sugar in a heat proof bowl. Add a
very small amount of half and half to the yolks and
sugar beating constantly with a wire whisk. Pour
mixture back into sauce pan with remaining half and
half, still beating with the whisk. Place over low heat
and stir constantly until thickened and can coat the
back of the spoon. Do not boil. Stir in vanilla extract.
Keep warm until ready to serve with the pudding.
3. Spoon cooked bread pudding into an attractive
serving dish. Ladle some custard sauce over the top.
Serve the rest of the sauce on the side.

Innkeepers' Words of Wisdom
We recently spoke with Seminar
Graduate Innkeeper Maryanne Shanahan of the
Hawthorn
Inn in Camden, Maine. Maryanne has been the
Innkeeper at The Hawthorn Inn for nearly six years.
We asked her
what advice she would give to Future Innkeepers and
here is her list of essential advice to keep in mind:
- Don't spend all of your money up front;
- Expand your network of Innkeepers;
- Have a plan for the Inn.
